    I bought this book as it was described as a professional resource and as a chef educator, I look for excellent reference materials I am disappointed as is filled with double page spreads of single photos with very brief descriptions and not the historical, cultural, or current material that I was hoping for I am glad that I did not buy any others in the series No offence to the authors, but this is not what I was expecting.
